Maharashtrian Puran poli recepie
Ingredients: 500g channa dal 250g Jaggary 250g sugar, salt to taste 300g Maida(All-purpose flour) 200g Atta( whole wheat flour ) 5tbl.sp. oil Ghee for applying on Puran poli 1 tea sp. Turmeric powder Method:
Soak chana dal overnight:
Add 1/2 tea sp. turmeric powder,cook dal well in a pressure cooker( dal should be very soft). Drain out all the excess water. Let it cool down.Grind the cooked dal in a mixer to make a fine paste.
Add Jaggery, sugar and salt to taste. mix it well. Keep the mixture in a microwave for 5 minutes. stir it well and keep it again in the microwave for 5 minutes. continue this processable 3 to 4 times till the consistency is suitable for making size ball.
To prepare dough: Add all-purpose flour and whole wheat flour together add pinch of turmeric powder, salt and oil. Make a soft dough by adding water. Let it rest for 30 min Take a medium or large size ball from the dough. Roll it 2 to 3 inches in circumference on a dusted rolling board. Place a portion of puran mixture in the center of rolling dough. Bring the edges together towards the center. Join all edges and the pinches.
Roll the stuffed dough/poli as thin as you can.Place the rolled puran puli on pan. When one side gets brown turn on to other side till you see brown spots. If everything is done properly then the puran poli will puff up.
Spread good amount of desi ghee on them before serving.
